Dragon Fruit Superfood Sorbet

Maintaining after weight loss is very much an ongoing challenge. I still have those same desires for decadent desserts and other fat snacks. It's especially difficult when summer rolls around and there are parties with barbecues, cocktails, and lots of ice cream to consume. I made homemade dragon fruit sorbet to help curb those desires.

One of my weight loss tips is to binge smart. I don't deny myself all the treats. I've learned to balance them and when I feel the need to overindulge, I make sure there's a healthy snack to binge on.
I bought an ice cream maker in a thrift store a few years ago and have enjoyed making my own ice creams and sorbets. I'm enjoying it now more than ever because I can make healthier versions of some of my favorites.

Dragon fruit (pitaya) is a superfood rich in vitamins and minerals. It's low calorie, delicious and has great color. I admit that it was the magenta color popping out at me in the freezer section that prompted me to give it a try.

The taste is light and not super sweet so I combined the fruit with sweeter fruits to give it a richer flavor.

Dragon Fruit Sorbet

12oz bag frozen dragon fruit
1 banana
¼ cup pineapple
4 oz coconut water
2 Tablespoons honey (optional)
squeeze of lemon

Directions: Cut the banana and pineapple into chunks and freeze. Mix all ingredients in a blender. Pour into airtight containers and allow to harden in freezer. Or you can run through an ice cream maker first which is what I did. Freeze at least an hour for an ice cream like consistency.

You can also skip freezing all together and drink as a smoothie!
