No Bake Mint Fudge Truffles

After a new adventure to Mariano's in Chicago, I created yummy no bake mint fudge truffles. Instead of hoarding pictures, I'm starting to actually use my pins.  Last week, fancy shoes. This week fancy balls truffles.

Mariano's St. Patrick's Day Treat





The truffles only requires four ingredients (5 for my version) and it's the perfect color for a St. Patrick's Day treat. I'm eating mine now though.

Ingredients

- 1 package grasshopper fudge mint cookies
- white chocolate bar
- 1/2 brick cream cheese
- food coloring (optional)
- sugar crystals (optiona)

Just so you know, mine look nothing like the pinned picture but I imagine they taste the same. I had to make some adjustments. I couldn't find almond bark so I subbed with white chocolate.

Instructions

Crush cookies and mix with softened cream cheese. The recipe calls for a food processor and I don't have one so I crushed the cookies in blender and hand mixed it with the cream cheese.

Scoop out about a tsp of the mixture and roll into a nice ball shape. Place on cookie sheet lined with wax paper.

Melt white chocolate bar on stove and add a drop or two of food coloring for a festive St. Patrick's Day theme. Drizzle over truffles and top with sugar crystals. Done!

I am not very good at baking so I was pleased that this was so quick and easy and required NO baking. Thrifter. Yes. Baker. No.

I bought all of my ingredients at Mariano's here in Chicago. This was my first time visiting even though there's a location less than 15 minutes away. Since this was a new adventure for me, I wandered around while looking for my supplies.

This store has everything!

I love that there were so many options available including products from around the world and local brands. I don't eat vegan anymore but I still buy meatless and dairy free products when I can find them. There was a great selection available plus a huge selection of fresh vegetables. I also spotted cakes, a sushi bar and a huge selection of cheeses.

When I visited the Mariano's website, I found a boatload of store coupons too and even double coupon day on Wednesdays. I'm not a coupon person. Coupons wither and die unused in my purse.

I still saved money by buying some store brands and signing up for a rewards card.

I was offered the Mariano's Rewards Card at checkout and was able to start the savings right away. Registering my card was very easy using the store kiosk before I left the store. I also got to listen to the music a little bit longer. This store has live music, friends.

I told you it has everything!

I love your truffles and I like them even better because they aren't "perfect". Perfection is over-rated and often times that perfection is achieved with smoke and mirrors ----well, maybe not THOSE two things exactly but still. I'm going to make them because they look delicious and my family LOVES mint and chocolate.
